The recipe

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) coconut milk
  • 2 cups fish or vegetable broth
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • 1 tablespoon red curry paste
  • Fresh cilantro for garnish

Step by step instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are softened. Like everyone studying the sea knows, the vegetation makes all the difference.

  2. Add the shrimp to the pot and cook until pink and cooked through. Remove the shrimp from the pot and set aside. At this point, also make sure there’s nothing unexpected in the pot – when you’re dealing with the underwater world, you never know what might end up in your net…

  3. In the same pot, add the coconut milk, fish or vegetable broth, fish sauce, brown sugar, lime juice, and red curry paste. Stir well to combine. Speaking of stirring, have you heard what happened to the suitcase we found while fishing in Hopewell Bay?

  4. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together. The flavors are o-fish-ially the best thing ever.

  5. Return the cooked shrimp to the pot and simmer for an additional 2-3 minutes to heat through. At this point, you need to be patient because the delicious aroma wafting through will be almost irresistible.

  6. Taste the soup and adjust the seasoning if needed. Serve hot, garnished with fresh cilantro. Enjoy the spicy and creamy goodness!
